VIEUX SAJOUS 5 Year Old 2019, 58.3% ABV

Established in 2004, the Chelo Distillery continues a family legacy that stretches back fifty years. Situated on a windswept plateau in northern Haiti, it is surrounded by a 30-hectare plantation where Michel Sajous grows the Cristalline variety of sugar cane.  

This expression is crafted through natural fermentation using indigenous yeasts, lasting five to eight days, and is distilled over an open flame in a pot still. It is a blend of casks that previously held rums from Hampden, Mount Gay, Bielle, and Caroni, as well as whisky from the Benriach Distillery and bourbon.  

Aged in the cellars of the Port-au-Prince Distillery in Haiti, this rum offers a balanced aromatic and flavor profile, marked by pronounced empyreumatic notes that gradually transition into honeyed tones.
