RHUM RHUM PMG, 56% ABV
Rhum Rhum is the only rum in the world made from pure, fresh, undiluted sugar cane juice. Unlike other agricole rums, which dilute the juice with 50% water to lower the sugar content and accelerate fermentation to 36/48 hours, Rhum Rhum uses undiluted juice. On Marie Galante, the sugar cane is cultivated using traditional methods, preserving old varieties like the legendary B 47.259 and the highly prized canne rouge, which have disappeared from most other Caribbean islands.
The cane juice undergoes fermentation in temperature-controlled vats for seven to nine days, resulting in a rum with unmatched richness and aromatic complexity. The fermented must is then distilled twice by Gianni Capovilla. The first distillation is simple, while the second is a batch distillation that removes the heads and tails. Distillation is carried out in two bain-marie copper stills, specially designed by Capovilla and crafted in Germany by Müller. Before bottling, the white rum rests for a year in stainless steel containers, while the rum meant for aging is matured in 228-liter French oak barrels. Today, Rhum Rhum continues to be produced at the Père Labat distillery in Marie Galante, still using the original stills.
