Brown sugar shochu, or 'Kokuto' shochu, is made exclusively on the Amami Oshima Island located between Kagoshima and the Okinawa Island chain. Whiles coined as 'brown sugar' it is not the industrial caramelized sugar that you may be thinking of, but rather sugar derived from sugarcane!
The Lento Kokuto Shochu has a rich texture that feels like it is melting in your mouth. This is due to the presence of two different types of yeast – one for taste and one for aroma – and the resulting gentle flavour and aromatic sweetness brings out the unique taste of the shochu. Aged by the onkyo jukusei (acoustic aging) method for three months, in a cellar with classical music playing in the background, the result is a round aroma, smooth flavor with a slight sweetness.
