Capovilla is a renowned Italian distillery founded by master distiller Vittorio "Gianni" Capovilla. Located in Rosà, in the Veneto region, the distillery produces some of the best eaux-de-vie (fruit brandies) and grappas in the world.
Capovilla is celebrated for its meticulous approach to distillation, using only the finest, carefully selected fruits and traditional copper pot stills. This dedication to quality and authenticity results in spirits that are highly aromatic and true to the essence of the fruits from which they are made. The distillery’s products are acclaimed for their purity, complexity, and exceptional craftsmanship, making Capovilla a revered name among spirits enthusiasts worldwide. All capovilla spirits are laced, waxed and stamped by hand, and the labels handwritten.
They produce in extremely small batches so bottle releases of a certain vintage are usually very limited internationally.
This is a wild raspberry eau-de-vie, distilled in 2008 by the master Capovilla in his bain-marie stills just outside the town of Bassano.

Serving Suggestions
First things first, be comfortable, relaxed and free from distractions. Pour a healthy amount (15-25ml) into a nosing glass (e.g., glencairn) and let it sit for a while. We recommend a minute of resting in the glass for every year in the cask. Otherwise, let it settle down for 5-10 minutes at least.
Help yourself to a 'warm up dram' in the meantime - something simple to open up the palate. When ready, start nosing the spirit, followed by sipping it (noting how it arrives on your palate and its development), and finally the finish. Take your time to get to know the spirit, noting its expression, character, depth, complexity and flavours. These can all change with adding drops of water so play around to find different sides of the spirit and identity a personal sweet spot for yourself!
This goes really well on the rocks as well, and our personal sweet spot is a cube of ice with 25ml of the spirit in a glencairn glass!
But always remember, the best way to drink it is the way you like it!
